For anyone who processes their own big game, this knife is a must have. The flexible blade is perfect for working closely around bone,getting in tight places and odd angles to efficiently remove the meat from the bone. The flexible blade is perfect when making butterfly back strap cutlets. Much like filleting a fish, the connective tissue is easily filleted off the back strap pieces, leaving only clean cutlets. Holds and edge very well, and is resharpened or touched up very quickly. Great tool!

This is just as described. I like the handle and the flexibility lets me do close to the bone when boning. I used to be a meat cutter for many years and am glad I purchased this knife.
