I have always have had a lot of luck with the Mercer Genesis line of knives. I work every day in a commercial kitchen and bring these knives in instead of using the cheap stamped knives that are provided to us. The Chinese chef’s knife was a great addition. The blade is a touch thinner than others I have seen for around the same price, but the edge stays very sharp with normal maintenance. Remember that this knife is not for bones. It will not last you very long if you use it for that application. Aside from that once you get used to the size; it will become your main knife for everyday preparation.
